Here’s what we’ve been up to!
At Finca T, we believe coffee is much more than a beverage. It is a tool to improve lives, care for Mother Earth, and produce extraordinary coffee—the three pillars that guide every action we take.
Together, June and July tell the story of a farm moving with purpose. From utilizing the latest tech, crop forecasting, celebrating our culture, monitoring biodiversity, exporting, and connecting with roasters, each action supports our goal of delivering consistent, traceable coffee with a meaningful story behind every cup.
Harvest forecasting
We estimated expected production per manzana (about 1.73 acres) to plan for processing, our contracts with roasters, and our export schedule. This first sampling provides an initial view of the farm’s productive potential and will be complemented by a second evaluation between August and September.
Soil profiling
Through soil pits of approximately one cubic meter, we analyzed the different soil layers and their physical characteristics, including texture, structure, and composition. This helps us understand the environment where our coffee grows and know how to improve fertility and protect soil life, supporting a more stable, higher-quality production.

Manual cleaning of coffee plots
Plot cleaning was carried out manually using traditional tools such as machetes and pandos to control weeds without aggressively disturbing the soil. In addition to protecting our soil naturally, this allows us to invest in our local workforce instead of just using chemicals.
For us, excellence in the cup begins long before processing: it starts with well-understood and carefully managed soil.

Innovation and Artificial Intelligence to Produce Extraordinary Coffee
Pillar: Producing Extraordinary Coffee
At Finca T, we are integrating artificial intelligence for soil analysis, optimization of fertilization plans, and for administrative support. This tool helps us make better decisions in the field so we can focus our attention on the physical work behind growing coffee and reducing our environmental impact.
The combination of local knowledge and our in-house agronomists with this new technology helps us “check our work” as we pursue quality for our roaster partners.
Environment Week at the School
Pillar: Sustainable practices, Improving Lives
From June 1 to 5, Escuela Rural Mixta Terrerito Matiak Foundation celebrated Environment Week, which strengthens environmental awareness from childhood. T hroughout the week, students participated in solid waste collection days, created themed murals, and took part in creative activities related to protecting nature. These actions promote responsibility, respect, and collective work.

Educational Tour to Copán Ruinas
Pillar: Improving Lives
We also took the students on a field trip to Copán Ruinas to keep them connected to their culture and learn about the history, traditions, and organizational systems of the Maya civilization.
This experience reinforced a sense of identity and cultural pride, especially in a region where much of the population identifies as Maya Chortí.

National Identity Day: Culture, Roots, and Belonging

On July 20, FincaT celebrated National Identity Day in honor of Lempira, a national hero in Honduran history. During the event, students presented traditional dances and created typical costumes using seeds and local materials such as beans, corn, coffee, and corn husks, transforming elements of the productive landscape into living expressions of identity and belonging.
At Finca T, we want our community to remain connected to its roots. We want to be a farm that invests in future generations, preserves its culture, and builds an authentic story behind every coffee.

Bird Monitoring and Tree Inventory: Protecting the Coffee Ecosystem
Pillar: Caring for Mother Earth
Birds are important indicators of ecosystem health. When new species arrive at or remain on the farm, they help us understand that the environment provides food, water, shelter, and suitable conditions for wildlife.
This month, we identified and reported three new species at Finca T: Purple Gallinule, Northern Jacana, and Black-crowned Night Heron. We also observed the Spotted Sandpiper earlier in the migration season. All were observed at the farm’s 12 million gallon rainwater reservoir, a space that has become a habitat for different bird species and local wildlife.
We also filled out our tree inventory within the coffee plots. We identified the different species present in cultivated areas, as well as measured height and canopy coverage. This helps us understand the shade structure on our lots and make more precise decisions that support coffee quality.
These practices allow us to protect not only trees, but also the birds, insects, fungi, and other organisms that form part of the farm’s natural balance.

Our Coffee Crosses Borders: Export to Italy

During June, we celebrated an important milestone: the shipment of our first coffee container to Italy.
This achievement represents our commitment to coffee-growing families in our region as we aim to bring traceable and sustainable Honduran coffees to the world.

World of Coffee Brussels and San Pedro de Copán Fair
On June 25 and 26, Finca T participated in World of Coffee Brussels 2026. This platform made it possible to connect with roasters that value direct trade and sustainability from all over Europe. Our goal here is to create more opportunities for local producers by finding roasters that care about their stories and their coffee.Pillar: Producing Extraordinary Coffee


Reflecting on Summer Months
Each activity carried out during June and July reflects Finca Terrerito’s commitment to its foundational pillars. Improving lives, caring for Mother Earth, and producing extraordinary coffee are not isolated actions. These two months show a farm moving forward with purpose: planning its harvest with responsibility, protecting biodiversity, honoring culture, creating local connection, and offering specialty coffee roasters a story grounded in traceability, consistency, and genuine impact.
